Second course: *Grains & Seeds by Dominique Crenn – *The Wind-Up Bird: Lemongrass Ginger Shochu with Kalamansi Uzu sour, Wasabi Leaf, Toasted Sesame, topped with a Honeyed Sunflower Seed Cloud with special drink by Mixologist Mariena Mercer from the Cosmopolitan of Las Vegas.

Third course: *Roasted Rabbit:Young Turnips, Abalone Dashi by Michael Hung, *Bird In The Hand: Bombay Sapphire Gin, Giffard Creme De Peche, Soju, Lychee Tea Vapor, Moshio Saline by Michael Lay, *Squab: Salsify, Cauliflower & White Chocolate by Dominique Crenn paired with Ferguson Crest Syrah , “Estate” & Ferguson Crest, “Fergalicious” (Santa Ynez Valley, CA 2012)

Dessert: *Chanterelle & Blonde Chocolate Mousse with Hazelnut Feulletine, Fig puree,, Chocolate Streusel by Indelisa Zarate, *Catcher in the Rye with Bourye, Carpano-Fig infused Vermouth, Chocolate Ancho Masala Syrup, and Nutella paired with drink by Mariena Mercer.
